Paleo Jalapeno Chicken Burgers with Guacamole



This Paleo Jalapeno Chicken Burgers with Guacamole recipe is a spicy and tasty take on regular burgers. They go well with a tasty homemade guacamole and are great for people on a paleo diet.

Ingredients:

  • 1 lb ground chicken
  • 2 jalapeno peppers, finely diced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp coconut oil for cooking
  • 4 large lettuce leaves for buns
  • For Guacamole:
  • 2 ripe avocados, mashed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup tomato, diced
  • 2 tbsp fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste

Instructions:

In a mixing bowl, combine ground chicken, diced jalapenos, chopped red onion, minced garlic, cumin, paprika, salt, and black pepper

Mix well

Divide the mixture into 4 portions and shape them into burger patties

Heat coconut oil in a skillet over medium-high heat

Cook the chicken patties for about 5-6 minutes per side or until they are cooked through and have a golden brown crust

While the burgers are cooking, prepare the guacamole

In a bowl, combine mashed avocados, chopped red onion, diced tomato, cilantro, lime juice, salt, and pepper

Mix until well combined

Once the chicken burgers are done, remove them from the skillet

To assemble the burgers, place each chicken patty on a large lettuce leaf, and top with a generous scoop of guacamole
