Low Carb Chocolate Fat Bombs
Try these low-carb chocolate fat bombs for a guilt-free chocolatey treat. Full of good fats and almost devoid of carbohydrates, they are ideal for anyone on a low-carb or ketogenic diet.
Ingredients:
- 1/2 cup coconut oil
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons powdered erythritol or your preferred low-carb sweetener
- 1/2 teaspoon vanilla extract
- A pinch of salt
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped pecans or almonds optional
- Silicone molds or mini muffin tin
Instructions:
In a microwave-safe bowl, melt the coconut oil until it becomes a liquid about 30 seconds
Stir in the cocoa powder, powdered erythritol, vanilla extract, and a pinch of salt until well combined
Fold in the unsweetened shredded coconut and chopped nuts if using
Pour the mixture into silicone molds or a mini muffin tin, filling each cavity about halfway
Place the molds or tin in the freezer and let the fat bombs set for at least 30 minutes, or until firm
Pop the fat bombs out of the molds and store them in an airtight container in the freezer
