Avocado Salmon Rice Bowl
Ingredients:
- 2 salmon fillets
- 2 cups cooked rice
- 1 avocado, sliced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Sesame seeds for garnish
- Green onions for garnish
Instructions:
Preheat oven to 400F 200C
In a small bowl, whisk together soy sauce, honey, rice vinegar, grated ginger, and minced garlic to make the marinade
Place salmon fillets in a shallow dish and pour marinade over them
Let them marinate for 15-20 minutes
Heat olive oil in a skillet over medium-high heat
Remove salmon from marinade, reserving the marinade, and cook for 3-4 minutes on each side until browned and cooked through
While salmon is cooking, brush avocado slices with some of the reserved marinade and grill them for 1-2 minutes on each side until lightly charred
Divide cooked rice among serving bowls
Top with cooked salmon, grilled avocado slices, and drizzle with remaining marinade
Garnish with sesame seeds and chopped green onions
Serve immediately and enjoy!
