Mediterranean Baked Sweet Potatoes
Ingredients:
- 2 medium sweet potatoes
- 1 can 15 ounces chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup sliced black olives
- 1/4 cup chopped red onion
- 2 tablespoons chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Optional toppings: hummus, tahini, vegan feta cheese
Instructions:
Preheat the oven to 400F 200C
Scrub the sweet potatoes clean and pierce them several times with a fork
Place the sweet potatoes on a baking sheet and bake for 30-35 minutes, or until tender
While the sweet potatoes are baking, prepare the Mediterranean topping
In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, black olives, red onion, parsley, olive oil, lemon juice, dried oregano, salt, and pepper
Toss until well combined
Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly
Slice the sweet potatoes open lengthwise and fluff the flesh with a fork
Top each sweet potato with a generous amount of the Mediterranean mixture
Serve immediately with optional toppings like hummus, tahini, or vegan feta cheese
