Broccoli Salad with Bacon



This broccoli salad with bacon is a flavorful and satisfying keto side dish that's perfect for picnics or barbecues.

Ingredients:

  • 4 cups broccoli florets
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon erythritol or preferred keto sweetener
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions:

Blanch broccoli florets in boiling water for 2 minutes, then immediately transfer to an ice bath to stop cooking

In a large bowl, combine blanched broccoli and crumbled bacon

In a small bowl, whisk together mayonnaise, apple cider vinegar, and erythritol to make the dressing

Pour the dressing over the broccoli and bacon mixture

Toss to coat evenly

Season with salt and pepper to taste

Garnish with chopped green onions before serving
