Slow Cooker German Potato Soup JO
A hearty and comforting soup made with bacon, soft potatoes, and a mix of herbs that are cooked slowly to bring out their rich flavors.
Ingredients:
- 6 slices bacon, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 pounds potatoes, peeled and diced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions:
Cook diced bacon in a pan until it gets crispy
Take it out and set it aside
Leave the bacon fat in the pan
Cut up the onion and garlic and add them to the pan
Cook until the onion is clear
Put the slow cooker on high and add the cooked bacon, onion, and garlic
Put diced potatoes, chicken broth, salt, pepper, thyme, and rosemary in the slow cooker
Use a stir to mix
Set the timer for 6 to 8 hours on low or 3 to 4 hours on high
Cover and cook until the potatoes are soft
Add heavy cream and cheddar cheese shreds and mix until the cheese melts
Serve hot with chopped parsley on top
