Molten Chocolate Cake
Ingredients:
- 4 oz 113g semi-sweet chocolate
- 1/2 cup 1 stick unsalted butter
- 1 cup powdered sugar
- 2 large eggs
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- Non-stick cooking spray
Instructions:
Preheat your oven to 425F 220C
Grease four ramekins with non-stick cooking spray and dust them with cocoa powder
Place them on a baking sheet
In a microwave-safe bowl, melt the semi-sweet chocolate and butter together in 30-second intervals, stirring until smooth
Let it cool slightly
In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined
Pour the melted chocolate mixture into the egg mixture and whisk until smooth
Sift in the all-purpose flour and salt, then gently fold it into the chocolate mixture until just combined
Divide the batter equally among the prepared ramekins
Bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still slightly jiggly
Remove the molten chocolate cakes from the oven and let them cool for a minute
Carefully run a knife around the edge of each ramekin to loosen the cakes
Invert the cakes onto serving plates
Serve immediately while the centers are still gooey and molten
You can dust with powdered sugar or top with a scoop of vanilla ice cream if desired
