Skinny Slow Cooker Taco Soup
A delicious and healthy taco soup made in a slow cooker. Packed with lean ground turkey, beans, and vegetables, this soup is full of flavor and perfect for a satisfying meal.
Ingredients:
- 1 lb ground turkey
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz corn kernels, drained
- 1 can 15 oz diced tomatoes
- 1 packet taco seasoning
- 4 cups low-sodium chicken broth
- 1 cup water
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped green onions, diced avocado
Instructions:
Toast the ground turkey in a pan over medium-high heat until it's golden brown and fully cooked
Get rid of any extra fat
Mix the cooked turkey with the chopped onion, bell pepper, and garlic that has been minced
Set the slow cooker on low and add the corn kernels, diced tomatoes, taco seasoning, black beans, and kidney beans
Add the chicken broth with less salt and water
Mix everything together
Cook on low for 6 to 8 hours or high for 3 to 4 hours with the lid on
If you think the soup needs more salt or pepper, add it before you serve it
You can serve it hot with extras like sour cream, chopped green onions, diced avocado, shredded cheese, or both
